Red Velvet Cake Balls

A couple of weekends ago, I was at Marci's and she gave me an Oreo Truffle that her sister, Melissa, had made. And they were absolutley delicious! So I asked Melissa for the recipe and she sent it to me and on the same recipe was Red Velvet Cake Balls. And I really like red velvet, so I decided I wanted to try to make those. I didn't want to make a whole batch for the house because that wouldn't be good for me because I'd eat them all and it wouldn't be good for my grandma either.


They turned out so good! Even though they did not come out as pretty (the dipping them in the chocolate was the toughest part for me), they were still BOMB! They were so easy to make.

The recipe:
What you'll need:
  • 1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
  • 1 can cream cheese frosting (16 oz.)
  • 1 package chocolate bark (regular or white chocolate) (I used both regular AND white)
  • wax paper



Directions:

1. After cake is cooked and cooled completely, crumble into large bowl.

2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)


3. Roll mixture into quarter size balls and lay on cookie sheet.


4. Chill for several hours - make sure they are really firm. (You can speed this up by putting in the freezer.)

5. Melt chocolate in microwave per directions on package.

6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra - two forks also works great if your chocolate is warm enough.)

7. Drizzle with extra chocolate bark.

And BLAM! That's all!

Just some side notes:

Make sure the cake is COMPLETELY cooled. I made the mistake of being impatient, so the mixture was hard to roll. So I just stuck the mixture in the freezer for a while, which made it stiffer, thus making it easier to roll.

I had a really hard time with rolling the balls in the chocolate. I tried to use the two-fork technique she mentioned, but it wasn't happening. So the spoon worked much better. I also read that some used toothpicks. So, use a method that suits you best.

Melt the chocolate a little bit at a time because it thickens easily.
